Preparation
- Preheat the oven to 350°F (175°C) and grease a madeleine pan.
- Melt the butter and let it cool slightly.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the sugar and eggs together until pale and thick.
- Add the melted butter and peppermint extract, then mix well.
- Fold in the dry ingredients until just combined.
- Spoon the batter into the madeleine pan.
Baking
- Bake for 10-12 minutes or until the edges are firm.
- Let them cool for a few minutes, then remove from the pan.
Serving
- Dust with powdered sugar before serving.
Notes
Store madeleines in an airtight container at room temperature. Best enjoyed within a few days. They can be frozen for up to two months. Let thaw at room temperature before serving.
