  • 1 medium bell pepper, diced
  • 1/2 medium red onion, thinly sliced

  • 1/4 cup balsamic vinaigrette dressing Dressings can be varied to change flavor profile.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. Add the chopped chicken on top of the vegetables.
  3. If using, sprinkle feta cheese over the salad.
  4. Drizzle balsamic vinaigrette dressing over the salad.
  5. Season with salt and pepper to taste.
  6. Toss gently to combine all ingredients.
  7. Serve immediately and enjoy!
