  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1 cup light brown sugar, packed If unavailable, make your own
  • ½ teaspoon salt Balances sweetness
  • 1 teaspoon ground cinnamon, divided Use ½ teaspoon for batter and ½ teaspoon for topping
  • 3 tablespoons granulated sugar (for topping) Sweetens the top

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together the melted butter and brown sugar until combined.
  3. Add the egg, honey, and vanilla extract, and whisk until mixed well.
  4. Stir in the flour, salt, and ½ teaspoon of cinnamon until just combined.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle it over the batter.
Baking
  1. Bake in the preheated oven for 22–25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the blondies to cool completely before cutting them into squares.

Notes

These blondies can be served warm with ice cream or honey. Store them in an airtight container at room temperature for 3 to 5 days, or freeze for up to 3 months. For stronger cinnamon flavor, add more cinnamon to the batter.
