A fantastic twist on the traditional Italian dessert, combining a creamy ricotta filling with flaky puff pastry. Perfect for gatherings or a sweet treat after dinner.

Ingredients
  

For the filling
  • 1 cup ricotta cheese Well-drained to avoid soggy filling
  • 1/2 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • 1 teaspoon vanilla extract
For the pastry
  • 1 sheet puff pastry Use fresh puff pastry; thaw in fridge if frozen
  • 1 each egg (for egg wash)
  • Cinnamon (optional for dusting) For serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheet and cut it into squares.
  3. Place the squares on a baking sheet lined with parchment paper.
  4. In a mixing bowl, combine the ricotta cheese, powdered sugar, chocolate chips, and vanilla extract until smooth.
  5. Spoon the ricotta mixture onto the center of each pastry square.
  6. Fold the corners of the pastry over the filling and press to seal. Use the egg wash to help it stick.
  7. Brush the tops of the squares with the egg wash.
Baking
  1. Bake for 15-20 minutes or until golden brown.
  2. Allow to cool slightly, then dust with cinnamon if desired.
Serving
  1. When serving, arrange the squares on a platter and dust them with powdered sugar or cinnamon.
  2. They pair wonderfully with coffee or tea.
  3. You can also add fresh berries or a scoop of ice cream on the side for extra flavor.

Notes

To store, keep in an airtight container at room temperature for 1-2 days, or refrigerate for up to a week. Freezing is possible for up to 1 month if well-wrapped. Make ahead by preparing filling and assembling squares before baking.
