  • 1 tablespoon olive oil For sautéing

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for an additional minute.
Cooking
  1. Pour in the chicken broth and bring to a boil.
  2. Add the shredded chicken, egg noodles, and thyme.
  3. Reduce the heat and let it simmer until the noodles are cooked, about 8-10 minutes.
  4. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with chopped parsley.

Notes

For added flavor, consider using homemade chicken broth if you have it. You can also add different vegetables such as peas or corn for extra nutrition. If you like a thicker soup, try adding a bit of cornstarch mixed with water during cooking. Allow the soup to rest for a few minutes before serving for enhanced flavor.
