- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium pot, combine the rinsed rice, coconut milk, water, turmeric powder, sugar, and salt.
Cooking
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and garnish with fresh cilantro before serving.
Notes
Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat with a splash of water for the best texture. Fresh turmeric can enhance flavor and color. Sauté onions or garlic for extra flavor.
