  • 1 cup jasmine rice Rinsed under cold water
  • 1 can coconut milk (13.5 oz)
  • 1 cup water
  • 1 teaspoon turmeric powder
  • 1 tablespoon sugar Adjust to taste
  • 1 teaspoon salt

Method
 

Preparation
  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed rice, coconut milk, water, turmeric powder, sugar, and salt.
Cooking
  1. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  3. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and garnish with fresh cilantro before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat with a splash of water for the best texture. Fresh turmeric can enhance flavor and color. Sauté onions or garlic for extra flavor.
