Ingredients
  

For the Eclair Shells
  • 1 cup water Use cold or room temperature water.
  • 1/2 cup butter Unsalted butter is preferred.
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs Bring eggs to room temperature for better mixing.
For the Coffee Cream Filling
  • 1 cup strong brewed coffee Espresso can be used for a stronger flavor.
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, combine water and butter; bring to a boil.
  3. Stir in flour and salt; cook until the mixture forms a ball.
  4. Remove from heat, and let cool slightly.
  5. Beat in eggs, one at a time, until smooth.
  6. Drop dough by tablespoon onto baking sheets.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool on wire racks.
Making the Filling
  1. Whip cream with powdered sugar and vanilla until stiff.
  2. Cut eclairs, fill with coffee cream, and drizzle with coffee glaze.

  1. Serve your coffee eclairs on a beautiful platter.
  2. Pair with a cup of coffee or tea for a delightful treat.

Notes

Store leftover eclairs in an airtight container in the refrigerator. Best eaten within a couple of days. For crispiness, do not open the oven door while baking.
