Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- If chicken breasts are thick, pound them to an even 1-inch thickness, then season both sides lightly with salt and black pepper.
Crusting and Baking
- In a small bowl, combine mayonnaise, grated Parmesan cheese, garlic powder, onion powder, dried parsley, and paprika until well mixed.
- Spread an even layer of the Parmesan mixture generously over the top side of each seasoned chicken breast.
- Place the crusted chicken breasts on the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Finishing and Serving
- For a golden-brown crust, briefly broil the chicken for 1-2 minutes after baking, watching closely to prevent burning.
- Remove chicken from oven, let it rest for 5 minutes before serving, then garnish with fresh parsley and lemon wedges if desired.
Notes
For extra flavor, marinate the chicken in a little Italian dressing for 30 minutes before seasoning. Ensure the internal temperature of the chicken reaches 165°F (74°C) for doneness.
