Ingredients

Chicken
  • 4 Chicken breasts
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
Parmesan Crust
  • 1/2 cup Mayonnaise
  • 1/2 cup Grated Parmesan cheese
  • 1/2 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/2 tsp Dried parsley
  • 1/4 tsp Paprika
For Serving (Optional)
  • Fresh parsley, chopped for garnish
  • Lemon wedges for serving

Equipment

  • Baking sheet
  • Parchment paper or aluminum foil
  • Small mixing bowl
  • Spoon or spatula
  • Meat mallet (optional)

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. If chicken breasts are thick, pound them to an even 1-inch thickness, then season both sides lightly with salt and black pepper.
Crusting and Baking
  1. In a small bowl, combine mayonnaise, grated Parmesan cheese, garlic powder, onion powder, dried parsley, and paprika until well mixed.
  2. Spread an even layer of the Parmesan mixture generously over the top side of each seasoned chicken breast.
  3. Place the crusted chicken breasts on the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Finishing and Serving
  1. For a golden-brown crust, briefly broil the chicken for 1-2 minutes after baking, watching closely to prevent burning.
  2. Remove chicken from oven, let it rest for 5 minutes before serving, then garnish with fresh parsley and lemon wedges if desired.

Notes

For extra flavor, marinate the chicken in a little Italian dressing for 30 minutes before seasoning. Ensure the internal temperature of the chicken reaches 165°F (74°C) for doneness.
