Preparation
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the egg yolks, cottage cheese, and salt until well combined and smooth; blend the cottage cheese first if an even smoother texture is desired.
- In a separate, clean large bowl, beat the egg whites with cream of tartar using an electric mixer on high speed until stiff peaks form.
- Gently fold the cottage cheese mixture into the stiff egg whites, being careful not to deflate the egg whites, until just combined.
- Spoon 8 equal mounds of the mixture onto the prepared baking sheet, leaving space between each.
- Bake for 20-25 minutes, or until golden brown and firm to the touch.
Notes
For best results, ensure your egg whites are completely free of yolk for maximum volume. You can add herbs, spices, or cheese to the cottage cheese mixture for flavored cloud bread. Serve immediately or store in an airtight container for up to 3 days.
