Ingredients
  

Main Ingredients
  • 1 cup Cottage cheese Low-fat cottage cheese works well.
  • 4 large Eggs Large or extra-large eggs can be used.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
Optional Toppings
  • 1/2 cup Chopped herbs or vegetables Spinach, bell peppers, or crumbled feta are great additions.
  • 1/4 cup Shredded cheese Choose your favorite cheese.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together cottage cheese and eggs until well combined.
  3. Season with salt and pepper.
  4. Pour the mixture into greased muffin tins, filling each cup about 2/3 full.
  5. Add optional toppings if desired.
Baking
  1. Bake for 20-25 minutes or until the bites are set and lightly golden.
  2. Allow to cool slightly before removing from the muffin tins.

Notes

Serve warm or store in an airtight container in the refrigerator for up to 3 days. Microwave leftovers for a few seconds to reheat.
