  • 2 large chicken breasts (boneless, skinless)
  • 8 oz linguine pasta
  • ½ cup unsalted butter Divided for cooking
  • 4 cloves garlic, minced Use fresh for best flavor
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves Can substitute with other herbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes Optional for heat
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Freshly grated Parmesan cheese For garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. In a skillet over medium heat, melt a little butter and cook the chicken for about 7-10 minutes per side until golden brown and cooked through. Remove, let rest, and slice into strips.
Cooking the Pasta
  1. In a large pot, bring salted water to a boil, then add the linguine. Cook according to package instructions until al dente. Drain and set aside.
Making the Cowboy Butter Sauce
  1. In the same skillet, melt the remaining butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Stir in parsley, thyme, smoked paprika, onion powder, red pepper flakes (if using), and chicken broth. Let it simmer for a few minutes before finishing with lemon juice.
Combining Ingredients
  1. Add the cooked linguine and sliced chicken to the skillet with the cowboy butter sauce. Toss until well coated.
Serving
  1. Serve in bowls and sprinkle with freshly grated Parmesan cheese on top. Enjoy warm!

Notes

Best enjoyed fresh but can be stored in an airtight container for up to 3 days. Reheat in a skillet or microwave. Adjust spice level to your preference and consider substituting chicken with shrimp or vegetables.
