Ingredients

Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
Cowboy Butter
  • 1/2 cup Unsalted butter softened
  • 4 cloves Garlic minced
  • 2 tbsp Lemon juice
  • 1 tbsp Lemon zest
  • 1 tsp Dijon mustard
  • 2 tbsp Fresh parsley chopped
  • 1 tbsp Fresh chives chopped
  • 1 tsp Fresh thyme chopped
  • 1/2 tsp Red pepper flakes adjust to taste
  • 1 tsp Smoked paprika
  • 1/4 tsp Cayenne pepper optional
  • 1 tsp Worcestershire sauce optional
  • 1 tbsp Olive oil for searing

Equipment

  • Large skillet
  • Whisk
  • Cutting board
  • Knife
  • Tongs
  • Small bowl

Method

Prepare Chicken
  1. Pat chicken dry with paper towels and season generously with salt and black pepper.
Make Cowboy Butter
  1. In a small bowl, whisk together the softened unsalted butter, minced garlic, lemon juice, lemon zest, Dijon mustard, chopped fresh parsley, chives, thyme, red pepper flakes, smoked paprika, optional cayenne pepper, and optional Worcestershire sauce until well combined.
Cook Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Sear the seasoned chicken for 5-7 minutes per side until it is golden brown and cooked through.
  2. Reduce the heat to low, add the prepared cowboy butter to the skillet, and spoon it generously over the chicken for 1-2 minutes, allowing it to melt and coat the chicken.
Serve
  1. Remove the chicken from the skillet and serve immediately, drizzled with any extra cowboy butter sauce from the pan.

Notes

For extra flavor, consider marinating the chicken in a little lemon juice and minced garlic for 30 minutes before cooking. Adjust the spice level of the cowboy butter to your personal preference by adding more or less red pepper flakes and cayenne pepper.
