  • 4 cloves garlic, minced Fresh garlic recommended
  • 1/2 cup grated Parmesan cheese Use fresh for best flavor
  • 1 teaspoon Italian seasoning

  • 4 medium potatoes, diced
  • 1 cup chicken broth Use low-sodium if preferred
  • 2 tablespoons olive oil
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. In a slow cooker, combine the diced potatoes and olive oil.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Place the seasoned chicken on top of the potatoes.
  4. In a small bowl, mix the minced garlic and Parmesan cheese, then spread it over the chicken.
  5. Pour the chicken broth over everything in the slow cooker.
Cooking
  1. Cover and cook on low for 6 hours or until the chicken is tender and cooked through.
  2. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat carefully to avoid drying out the chicken. For variations, you can add sun-dried tomatoes or spinach into the slow cooker.
