  • 2 lbs Yellow squash sliced
  • 4 tbsp Butter divided
  • 1 medium Onion chopped
  • 2 Eggs beaten
  • 1.5 cups Cheddar cheese shredded
  • 0.5 cup Milk
  • 1 sleeve Ritz crackers crushed
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Method
 

Preparation
  1. Slice and cook the yellow squash until tender, then drain thoroughly to remove excess water.
  2. In a skillet, melt 2 tablespoons of butter and sauté chopped onion until softened and translucent.
Assembly & Baking
  1. In a large bowl, mix the cooked squash, sautéed onion, beaten eggs, shredded cheddar cheese, milk, salt, and pepper until well combined.
  2. Pour the squash mixture into a baking dish. Crush Ritz crackers and sprinkle evenly over the top. Drizzle with the remaining 2 tablespoons of melted butter.
  3. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes, or until the casserole is set, golden brown, and bubbly.

Notes

For extra flavor, try adding a pinch of garlic powder or onion powder to the squash mixture. You can prepare the squash mixture ahead of time and refrigerate it, then assemble and bake just before serving.
