Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup heavy cream
  • 1 large egg
Additional Ingredients
  • 1/2 cup unsalted butter, cold and cubed Ensure the butter is very cold for flaky scones.
  • 1/2 cup fresh cranberries, chopped Can substitute with dried cranberries.
  • 1 tablespoon orange zest Can substitute with lemon zest for a different flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in cranberries and orange zest.
  5. In a separate bowl, whisk together heavy cream and egg.
  6. Add the wet mixture to the dry mixture and mix until just combined.
  7. Turn the dough onto a floured surface and pat it into a 1-inch thick circle. Cut into wedges and place on the prepared baking sheet.
Baking
  1. Bake for 15-20 minutes or until golden.
  2. Let cool slightly before serving.

Notes

Serve warm or at room temperature with butter and jam. Pairs well with tea or coffee. Store in an airtight container at room temperature for up to 2 days or freeze for up to a month.
