  • 2 cups corn (fresh, frozen, or canned) Drain well if using canned corn.
  • 8 oz cream cheese, softened Use flavored cream cheese for added taste.
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese Reserve half for topping.
  • 1/4 cup butter, melted
  • 1/4 cup sugar
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the cream cheese and sour cream until smooth.
  3. Add the milk, melted butter, sugar, salt, and pepper, and mix well.
  4. Stir in the corn and half of the cheddar cheese.
Baking
  1. Pour the mixture into a greased baking dish and top with the remaining cheddar cheese.
  2. Bake for 25-30 minutes until bubbly and golden.
  3. Serve warm as a side dish.

Notes

For added flavor, consider mixing in cooked bacon or sausage. For a crunchy texture, sprinkle crushed crackers or breadcrumbs on top before baking.
