  • 1 lb Shrimp large, peeled and deveined
  • 12 oz Linguine or Fettuccine
  • 2 tbsp Olive oil
  • 4 cloves Garlic minced
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese grated
  • 0.5 cup Chicken or vegetable broth
  • 2 cups Spinach fresh
  • 0.5 tsp Red pepper flakes optional
  • Salt to taste
  • Black pepper to taste
  • 0.25 cup Fresh parsley chopped, for garnish

Method
 

Preparation
  1. Cook pasta according to package directions until al dente; reserve 1 cup of pasta water and then drain the pasta.
  2. In a large skillet, heat olive oil over medium heat, then add shrimp and cook for 2-3 minutes per side until pink and cooked through; remove shrimp and set aside.
  3. To the same skillet, add minced garlic and red pepper flakes (if using), cooking for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, bring to a simmer, then stir in grated Parmesan cheese until melted and smooth, seasoning with salt and pepper.
  5. Add the cooked pasta, cooked shrimp, and fresh spinach to the sauce, tossing until the spinach wilts and everything is well combined, adding a splash of reserved pasta water if the sauce is too thick.
  6. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, you can marinate the shrimp for 15 minutes in a little olive oil, lemon juice, and garlic powder before cooking. Adjust the amount of red pepper flakes to your spice preference.
