Preparation
- Cook pasta according to package directions until al dente; reserve 1 cup of pasta water and then drain the pasta.
- In a large skillet, heat olive oil over medium heat, then add shrimp and cook for 2-3 minutes per side until pink and cooked through; remove shrimp and set aside.
- To the same skillet, add minced garlic and red pepper flakes (if using), cooking for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, bring to a simmer, then stir in grated Parmesan cheese until melted and smooth, seasoning with salt and pepper.
- Add the cooked pasta, cooked shrimp, and fresh spinach to the sauce, tossing until the spinach wilts and everything is well combined, adding a splash of reserved pasta water if the sauce is too thick.
- Garnish with fresh parsley and serve immediately.
Notes
For extra flavor, you can marinate the shrimp for 15 minutes in a little olive oil, lemon juice, and garlic powder before cooking. Adjust the amount of red pepper flakes to your spice preference.
