Preparation
- Pat chicken dry and season generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown, then remove and set aside.
Cooking the Sauce
- In the same skillet, melt butter, then add chopped onion and cook until softened for 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom of the skillet, and bring to a simmer.
- Reduce heat to low, then stir in heavy cream and grated Parmesan cheese until the sauce is smooth and heated through.
Finishing
- Return the seared chicken breasts to the skillet, nestling them into the creamy sauce.
- Cover and simmer for 8-10 minutes, or until chicken is cooked through and the sauce has thickened slightly.
- Garnish with fresh parsley before serving.
Notes
Serve this creamy smothered chicken with mashed potatoes, rice, or pasta to soak up all the delicious sauce. Steamed green beans or asparagus make a great side dish.
