Creamy Sauce
  • 2 tbsp Butter
  • 0.5 Yellow onion diced
  • 2 cloves Garlic minced
  • 2 tbsp All-purpose flour
  • 1.5 cups Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 tsp Dried thyme
  • 0.25 tsp Salt
  • 0.125 tsp Black pepper
For Serving
  • 4 cups Cooked white rice
  • 2 tbsp Fresh parsley chopped

Method
 

Prepare Chicken
  1. Season chicken with salt and pepper, then brown in olive oil in a large skillet for 5-7 minutes per side until cooked through. Remove and set aside.
Make Creamy Sauce
  1. In the same skillet, melt butter and cook diced onion until soft, then stir in minced garlic for one minute until fragrant.
  2. Sprinkle flour over the aromatics, stirring for one minute; gradually whisk in chicken broth, then heavy cream and thyme. Simmer for 5-7 minutes until the sauce slightly thickens.
  3. Return the cooked chicken to the skillet, reduce heat, cover, and simmer for 5-10 minutes to meld flavors, adjusting seasoning as needed.
Serve
  1. Serve the creamy smothered chicken immediately over cooked white rice, garnished with fresh chopped parsley.

Notes

For a richer flavor, consider using chicken thighs instead of breasts. Adjust seasoning to taste.
