  • 1 cup Orzo pasta
  • 1/2 cup Sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cloves Garlic (minced)
  • 1/2 Small onion (finely diced)
  • 2 cups Vegetable broth
  • 1/2 cup Heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 2 cups Fresh spinach (optional)
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh basil (chopped, for garnish)

Method
 

Preparation
  1. Cook orzo pasta until al dente; drain and reserve some pasta water.
  2. Sauté onion, then add garlic and sun-dried tomatoes; cook until fragrant.
  3. Simmer vegetable broth, then stir in heavy cream and Parmesan until smooth.
  4. Combine cooked orzo and spinach with the sauce, tossing until spinach wilts and orzo is coated.
  5. Season with salt and pepper, then garnish with fresh basil and serve.

Notes

For extra flavor, reserve some pasta water to thin the sauce if needed. Adjust seasoning to taste.
