  • 4 pieces cod fillets (about 6 oz each) Substitute with tilapia or perch if desired
  • 1 cup panko breadcrumbs For a light, crunchy crust
  • 1/2 cup Parmesan cheese (grated) Adds a rich, salty depth of flavor
  • 1 tbsp olive oil or mayo To help the coating stick
  • 1 tsp garlic powder For flavor
  • 1 tsp onion powder For flavor
  • 1 tsp dried oregano For flavor
  • 1/2 tsp paprika For flavor
  • Salt & pepper To taste; season the fillets well
  • 1/4 cup mayo Optional for coating
  • 1 tbsp Dijon mustard Optional for dipping sauce
  • 1 tbsp lemon juice Optional for dipping sauce
  • Fresh parsley Optional for garnish

Method
 

Preparation
  1. Preheat your air fryer to 375°F.
  2. In a large bowl, combine panko breadcrumbs, garlic powder, onion powder, oregano, paprika, salt, and pepper. Stir until evenly distributed.
  3. Brush each cod fillet with olive oil or mayo to cover it completely.
  4. Gently press each coated fillet into the breadcrumb mixture, ensuring a generous layer sticks to the fish.
  5. Place the fillets in the air fryer basket in a single layer, ensuring space between each piece.
Cooking
  1. Air fry for 8-10 minutes, checking for doneness; the fish should be opaque and the crust should be golden brown.
Serving
  1. If making a dipping sauce, mix mayo, Dijon mustard, and lemon juice in a small bowl until well blended.
  2. Transfer the cooked cod to a plate and sprinkle with fresh parsley before serving.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for a few minutes to maintain crispiness. For extra flavor, feel free to add your favorite herbs and spices to the breadcrumb mixture.
