  • 4 fillets cod fillets (approx. 6 oz each, skinless, boneless)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Pat cod fillets dry with paper towels to ensure a crispy crust.
  2. In a shallow dish, combine Parmesan cheese, breadcrumbs, olive oil, garlic powder, paprika, salt, and black pepper.
  3. Dip each cod fillet into the Parmesan mixture, pressing gently to ensure an even coating on all sides.
Air Frying
  1. Preheat your air fryer to 400°F (200°C) and lightly grease the basket; then, place coated cod fillets in a single layer, ensuring not to overcrowd.
  2. Air fry for 12-15 minutes, flipping halfway through, until the cod is opaque, flaky, and the crust is golden brown and crispy.
  3. Carefully remove the cod from the air fryer and serve immediately, optionally with a squeeze of fresh lemon juice.

Notes

Serve with a squeeze of fresh lemon juice and a side of roasted vegetables or a light salad for a complete meal. Adjust cooking time based on the thickness of your cod fillets.
