Ingredients

For the dough
  • 4 cups all-purpose flour
  • teaspoons active dry yeast
  • cups warm water Warm but not hot to activate the yeast
  • 2 teaspoons sugar To help proof the yeast
  • 2 teaspoons kosher salt
  • ¼ cup olive oil Plus more for greasing the pan
For the toppings
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese

Method

Preparation
  1. In a mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for 5–10 minutes until it's foamy.
  2. Add flour, kosher salt, and olive oil to the bowl. Mix until a sticky dough forms. Cover the bowl and let it rise in a warm place for 1–1½ hours.
  3. Mince the garlic and grate the Parmesan cheese. Once the dough has risen, pour oil into a baking pan and transfer the dough to the pan.
  4. Use your fingertips to create dimples in the dough. Sprinkle the minced garlic, grated Parmesan, and any optional herbs on top.
Baking
  1. Let the dough rise for another 20–30 minutes while preheating the oven to 425°F (220°C).
  2. Bake for 20–25 minutes until the focaccia is golden brown.

Notes

Serve warm with olive oil for dipping. Store leftovers wrapped tightly and keep at room temperature for 2–3 days, or freeze for up to 3 months.
