- Preheat oven to 400°F (200°C). Boil potatoes in salted water until very tender, about 15-20 minutes, then drain thoroughly.
- Arrange boiled potatoes on a baking sheet. Using a potato masher or fork, gently smash each potato until flattened.
- Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and black pepper.
- Bake for 20 minutes, then remove from oven, sprinkle with grated Parmesan cheese, and return to bake for another 10-15 minutes, or until golden brown and crispy.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
For extra crispiness, ensure potatoes are very dry before smashing and roasting. Do not overcrowd the baking sheet.
