  • 1.5 lb Potatoes (baby or small Yukon Gold, boiled until tender)
  • 3 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh parsley (chopped, for garnish, optional)

Method
 

Instructions
  1. Preheat oven to 400°F (200°C). Boil potatoes in salted water until very tender, about 15-20 minutes, then drain thoroughly.
  2. Arrange boiled potatoes on a baking sheet. Using a potato masher or fork, gently smash each potato until flattened.
  3. Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and black pepper.
  4. Bake for 20 minutes, then remove from oven, sprinkle with grated Parmesan cheese, and return to bake for another 10-15 minutes, or until golden brown and crispy.
  5. Garnish with fresh parsley, if desired, and serve immediately.

Notes

For extra crispiness, ensure potatoes are very dry before smashing and roasting. Do not overcrowd the baking sheet.
