Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Skinless and boneless preferred.
  • 3 cloves garlic Minced.
  • 2 tbsp butter For the garlic butter.
  • 1 tsp salt Adjust to taste.
  • 1 tsp pepper Adjust to taste.
For the Bean Mixture
  • 1 can canned white beans Drained and rinsed.
  • 2 cups cherry tomatoes Halved.
  • 1 small shallots Sliced.
  • 2 tbsp olive oil For cooking.
  • 1 tsp salt Adjust to taste.
  • 1 tsp pepper Adjust to taste.
  • fresh herbs (optional) For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, melt butter and add minced garlic, cooking until fragrant.
  4. Brush the garlic butter on the chicken breasts and place in a baking dish.
Cooking the Bean Mixture
  1. In the same skillet, sauté sliced shallots until golden, then add cherry tomatoes and cook until they start to burst.
  2. Mix in the canned beans and olive oil, seasoning with salt and pepper.
  3. Pour the bean mixture around the chicken in the baking dish.
Baking
  1. Bake in the oven for about 25-30 minutes or until the chicken is cooked through.
Serving
  1. Serve the crispy chicken over the creamy beans and tomatoes, garnished with fresh herbs if desired.

Notes

For extra crispiness, pan-sear the chicken breasts before baking. Use fresh garlic instead of garlic powder for stronger flavor. Feel free to add other vegetables like bell peppers or spinach for nutrition.
