For the Chicken
  • 4 pieces chicken breasts
  • 4 tablespoons garlic butter Can substitute with regular butter or olive oil mixed with minced garlic.
  • Salt and pepper to taste

For the Creamy Tomato Beans
  • 1 can diced tomatoes (15 oz)
  • 1 can white beans, drained and rinsed (15 oz) Can substitute with black beans or chickpeas.
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • Fresh parsley for garnish Adds flavor and color.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat some olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper.
  4. Add the chicken to the skillet and cook until golden brown on both sides (about 5-7 minutes per side).
Cooking
  1. Brush the chicken with garlic butter and transfer it to the oven.
  2. Bake for 15-20 minutes or until the chicken is fully cooked.
  3. In the same skillet, add the diced onion and sauté until translucent.
  4. Add minced garlic and cook for another minute.
  5. Stir in diced tomatoes and white beans, cooking until heated through.
  6. Season with salt and pepper to taste.
Serving
  1. Serve the crispy chicken over the creamy tomato beans and garnish with fresh parsley.

Notes

For best crispiness, ensure the chicken is patted dry before seasoning. Consider marinating the chicken in garlic and herbs for an hour before cooking.
