Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Halve the baby potatoes and place them in a large mixing bowl.
  3. Pour in the olive oil and toss the potatoes until evenly coated.
  4. Stir in minced garlic, grated Parmesan, dried oregano, salt, and black pepper. Mix well.
Cooking
  1. Arrange the seasoned potatoes in a single layer on a baking sheet.
  2. Bake for 25-30 minutes, turning halfway, until golden brown.
  3. Let cool for a few minutes before serving.
