Ingredients
  

Main Ingredients
  • 2 medium sweet potatoes Peeled and cubed
  • 1 cup red lentils Cook according to package instructions
  • 1/2 medium onion Finely chopped
  • 2 cloves garlic Minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1/4 cup breadcrumbs Optional for crunchiness
  • oil for frying
Avocado Cilantro Sauce
  • 1 medium avocado
  • 1/4 cup cilantro
  • 1 tablespoon lime juice
  • to taste salt
  • splash water To adjust consistency

Method
 

Preparation
  1. Peel and cube the sweet potatoes, then boil until soft.
  2. In a separate pot, cook the red lentils according to package instructions until tender.
  3. In a large bowl, mash together the sweet potatoes and lentils.
  4. Add the onion, garlic, cumin, paprika, salt, pepper, and breadcrumbs. Mix until well combined.
  5. Form the mixture into patties.
Cooking
  1. Heat oil in a pan over medium heat and fry the patties until golden brown on both sides.
Sauce Preparation
  1. For the avocado cilantro sauce, blend the avocado, cilantro, lime juice, salt, and a splash of water until creamy.
Serving
  1. Serve the patties warm with the avocado sauce on the side.

These patties can be customized with other vegetables or spices. They are best served warm and can be paired with a side salad or roasted veggies.
