  • 1 lb ground turkey Choose lean ground turkey for a lighter option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed Great source of protein.
  • 1 can (15 oz) corn, drained Can substitute with fresh or frozen corn.
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
Spices and Seasonings
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Adjust to taste for spiciness.
  • Salt and pepper To taste.
For Serving
  • Tortilla strips Adds crunch to the soup.
  • Avocado, cheese, and cilantro Optional garnishes for flavor.

Method
 

Preparation
  1. In a crockpot, combine the ground turkey, chopped onion, minced garlic, black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir well to combine all ingredients.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Once cooked, serve hot in bowls with tortilla strips, avocado, cheese, and cilantro as toppings.

Notes

To store, let soup cool before transferring to an airtight container. Refrigerate for 3-4 days or freeze for up to 3 months. Reheat before serving.
