  • 1 cup Creamy peanut butter
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 2.5 cups All-purpose flour
  • 1 tsp Baking soda
  • 0.5 tsp Salt
Peanut Butter Frosting
  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Creamy peanut butter
  • 3 cups Powdered sugar
  • 2-4 tbsp Milk or cream
  • 0.5 tsp Vanilla extract
  • 1 pinch Salt

Method
 

Cookie Base
  1. Preheat the oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing it.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the creamy peanut butter, then add the eggs one at a time, mixing well after each addition, and finally mix in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until they are just combined and no dry streaks remain.
  6. Press the cookie dough evenly into the prepared baking pan and bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out with moist crumbs.
  7. Allow the cookie base to cool completely on a wire rack before proceeding to frost it.
Peanut Butter Frosting
  1. In a large bowl, beat the softened butter and peanut butter together until the mixture is smooth and creamy.
  2. Gradually add the powdered sugar, mixing until it is well combined and the frosting is smooth.
  3. Add milk or cream one tablespoon at a time until the frosting reaches a smooth, spreadable consistency, then mix in the vanilla extract and a pinch of salt.
Assembly
  1. Once the cookie base has completely cooled, evenly spread the prepared peanut butter frosting over the top.
  2. Cut the frosted cookie into individual bars and serve them.

Notes

For best results, ensure your butter and peanut butter are at room temperature. Let the bars cool completely before frosting to prevent melting.
