Ingredients
  

Salad Ingredients
  • 1 small head green cabbage, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or pepper jack) Adjust to taste.
  • 1 cup Fritos corn chips Add just before serving.
  • 1/2 cup green onions, sliced
  • 1/2 cup cilantro, chopped
Dressing Ingredients
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1-2 teaspoons chipotle seasoning or sauce Adjust to taste.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine chopped cabbage, cherry tomatoes, corn, black beans, cheese, green onions, and cilantro.
  2. In a separate bowl, whisk together mayonnaise, lime juice, chipotle seasoning, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss to combine.
  4. Just before serving, add Fritos to the salad for added crunch.

Notes

Serve chilled or at room temperature. Pairs well with grilled meats. Add additional toppings like avocado or jalapeƱo for extra flavor. Store leftovers in an airtight container in the refrigerator and keep Fritos separate until ready to eat.
