- Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie plate.
- Heat olive oil in a skillet, then sauté the chopped onion and minced garlic until they are softened.
- In a large mixing bowl, whisk together the eggs, milk, flour, salt, pepper, and optional nutmeg until the mixture is smooth.
- Fold in the thawed and thoroughly squeezed spinach, the sautéed onion and garlic, and the shredded cheese into the egg mixture.
- Pour the entire quiche mixture into the prepared pie plate, ensuring it is spread evenly.
- Bake for 35 to 45 minutes, or until the center is firm and a knife inserted into it comes out clean.
- Allow the quiche to cool for a few minutes before slicing and serving.
