Method
 

Cookie Preparation
  1. In a large bowl, cream together softened butter, cream cheese, and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Divide the dough in half, flatten each into a disk, wrap in plastic wrap, and chill for at least 1 hour or until firm enough to roll.
  5. Preheat oven to 375°F (190°C). On a lightly floured surface, roll out one disk of chilled dough to about 1/4-inch thickness and cut into desired shapes using cookie cutters.
  6. Place cut-out cookies onto parchment-lined baking sheets and bake for 8-10 minutes, or until edges are lightly golden.
  7. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Repeat with remaining dough.

Notes

For best results, do not overmix the dough. Chilling the dough is crucial for easy rolling and to prevent the cookies from spreading too much. These cookies are perfect for decorating with royal icing or simple glaze once completely cooled.
