Preparation
- In a jar or container, combine rolled oats, milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt, mixing thoroughly.
- In a separate small bowl, mix nut butter, brown sugar, and milk until smooth, then fold in the mini chocolate chips to create the cookie dough layer.
Chilling and Serving
- Carefully spoon the prepared cookie dough mixture over the oat mixture in the jar, then cover and refrigerate overnight or for a minimum of 4 hours to allow it to thicken.
- The next morning, stir the oats if desired, then add extra chocolate chips or a dollop of nut butter on top before serving for an extra treat.
Notes
For a richer cookie dough flavor, use cashew butter. Adjust sweetness to your preference by adding more or less maple syrup.
