  • 3 cups Cooked rice
  • 2 cans Black beans (15 oz each), rinsed and drained
  • 1 can Diced tomatoes (14.5 oz), undrained
  • 1 cup Vegetable broth
  • 1 cup Shredded cheddar cheese (optional)
Aromatics & Seasoning
  • 1 tbsp Olive oil
  • 1 medium Onion chopped
  • 1 medium Bell pepper (any color), chopped
  • 2 cloves Garlic minced
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat, then sauté chopped onion and bell pepper until softened (5-7 minutes). Add minced garlic, chili powder, and cumin, cooking for one more minute until fragrant.
  3. Stir the cooked rice, rinsed black beans, undrained diced tomatoes, vegetable broth, salt, and pepper into the skillet, mixing well to combine all ingredients.
Baking
  1. Transfer the rice and bean mixture into the prepared baking dish, spreading it evenly.
  2. Bake for 25-30 minutes, or until the casserole is heated through and bubbling.
  3. If desired, sprinkle shredded cheddar cheese over the top and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Notes

For extra flavor, let the casserole rest for 5-10 minutes after baking before serving. You can also customize by adding different vegetables like corn or spinach.
