Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the peanut butter and sugar substitute until light and fluffy.
- Beat in the egg, vanilla extract, baking soda, and salt until well combined.
- Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
- Gently flatten each cookie ball with a fork, creating a crisscross pattern.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are just set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
