  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the chopped dill pickles, salt, and pepper with the chicken breasts. Let marinate for 15 minutes.
  3. In a separate bowl, beat the eggs. In another bowl, combine the Parmesan cheese and breadcrumbs.
  4. Dip each marinated chicken breast in the egg, then coat with the Parmesan-breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear each chicken breast for 2-3 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 15-20 minutes or until the chicken is cooked through.

Notes
