Ingredients
  

For the dough
  • 1 cup unsalted butter, softened Make sure your butter is softened, not melted.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder Can substitute more flour if cocoa powder is unavailable, but this will change the flavor.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips Experiment with different types of chocolate chips for variety.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, cocoa powder, baking soda, and salt. Gradually beat this into the wet mixture until well blended.
  5. Fold in the chocolate chips.
  6. Drop by rounded tablespoons onto ungreased cookie sheets.
Baking
  1. Bake for 10-12 minutes, or until the edges are set.
  2. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

These cookies are best served warm right out of the oven. For storage, keep them in an airtight container at room temperature for about a week, or freeze them for up to three months. Don't overmix the dough after adding the flour to keep the cookies tender. For an extra touch, sprinkle a pinch of sea salt on top before baking.
