Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure it is at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 teaspoon peppermint extract Add more for a stronger flavor if desired.
Mix-ins
  • 1 cup dark chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the vanilla extract, egg, and peppermint extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the dark chocolate chips.
Baking
  1. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  3. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
