Ingredients
  

Tart Crust
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg, lightly beaten
Filling
  • 1 cup fresh blackberries Use fresh blackberries for the best flavor.
  • 1 cup heavy cream
  • 1 tablespoon Earl Grey tea leaves
  • 1/2 cup granulated sugar Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in the butter until the mixture is crumbly.
  3. Add the beaten egg and mix until a dough forms.
  4. Press the dough into tart pans and chill for 30 minutes.
Baking the Crust
  1. Bake the crusts for 15-20 minutes or until golden.
Making the Filling
  1. In a saucepan, heat the heavy cream with the Earl Grey tea leaves. Remove from heat after it’s warmed and let it steep for 10 minutes. Strain the cream to remove tea leaves.
  2. In a bowl, whisk together granulated sugar, cornstarch, and vanilla. Gradually add the infused cream, mixing until smooth.
  3. Gently fold in the blackberries.
Final Assembly
  1. Pour the filling into the cooled tart crusts.
  2. Bake for an additional 20 minutes until set.
  3. Let cool before serving.

Notes

These tarts can be served warm or at room temperature. They are best enjoyed with a dollop of whipped cream or a scoop of vanilla ice cream. Garnish with a few extra blackberries for a beautiful presentation. Pairing them with a cup of Earl Grey tea will enhance the flavors and make for a lovely dessert experience.
