Steps
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper, arranging graham crackers in a single layer.
  2. In a saucepan, combine butter and brown sugar, bringing to a boil and cooking for 3-5 minutes until thickened.
  3. Pour the hot toffee mixture evenly over the graham crackers, then bake for 5-7 minutes until bubbly.
  4. Remove from oven, immediately sprinkle chocolate chips over the hot toffee, and let sit for 5 minutes before spreading the melted chocolate.
  5. Decorate with festive sprinkles, then cool completely at room temperature before chilling in the refrigerator for at least 1 hour.
  6. Once firm, break the bark into irregular pieces and store in an airtight container.
