Ingredients

  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
Peppermint Glaze (Optional)
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • ¼ teaspoon peppermint extract
  • 2 tablespoons crushed peppermint candies for garnish

Method
 

Cookie Preparation
  1. Whisk together flour, baking powder, and salt in a bowl; set aside.
  2. Cream softened butter and granulated sugar until light and fluffy using an electric mixer.
  3. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined and a soft dough forms.
  5. Divide the dough into two disks, wrap them in plastic, and chill for at least 30 minutes or up to 2 hours.
  6. Preheat oven to 375°F (190°C) and prepare baking sheets with parchment paper.
  7. Roll out chilled dough on a lightly floured surface to about ¼-inch thickness, then cut shapes using cookie cutters.
  8. Place cookies on prepared baking sheets and bake for 8-10 minutes, or until edges are lightly golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Glaze and Garnish (Optional)
  1. Whisk powdered sugar, milk, and peppermint extract in a small bowl until smooth.
  2. Once cookies are completely cool, drizzle or spread glaze over them and immediately sprinkle with crushed peppermint candies.
  3. Allow glaze to set before serving or storing cookies.

Notes

For extra festive flair, add a few drops of red food coloring to the cookie dough or glaze.
