Cookie Preparation
- Whisk together flour, baking powder, and salt in a bowl; set aside.
- Cream softened butter and granulated sugar until light and fluffy using an electric mixer.
- Beat in the egg, vanilla extract, and peppermint extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined and a soft dough forms.
- Divide the dough into two disks, wrap them in plastic, and chill for at least 30 minutes or up to 2 hours.
- Preheat oven to 375°F (190°C) and prepare baking sheets with parchment paper.
- Roll out chilled dough on a lightly floured surface to about ¼-inch thickness, then cut shapes using cookie cutters.
- Place cookies on prepared baking sheets and bake for 8-10 minutes, or until edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Glaze and Garnish (Optional)
- Whisk powdered sugar, milk, and peppermint extract in a small bowl until smooth.
- Once cookies are completely cool, drizzle or spread glaze over them and immediately sprinkle with crushed peppermint candies.
- Allow glaze to set before serving or storing cookies.
Notes
For extra festive flair, add a few drops of red food coloring to the cookie dough or glaze.
