- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned on all sides, then remove and set aside.
- Reduce heat to medium, add chopped onion and minced garlic to the same skillet, and cook until softened, about 3-5 minutes.
- Whisk in softened cream cheese, chicken broth, milk, salt, black pepper, and Italian seasoning. Stir constantly until the sauce is smooth and slightly thickened.
- Return the cooked chicken to the skillet, coating it evenly with the creamy sauce, and heat through for 2-3 minutes.
- Garnish with fresh chopped parsley before serving hot.
