Sauce
  • 1/2 cup Sweet Chili Sauce
  • 1/4 cup Soy Sauce low sodium
  • 2 tbsp Rice Vinegar
  • 1 tbsp Honey
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
Vegetables (Optional)
  • 1 Red Bell Pepper sliced
  • 1/2 Onion sliced
For Serving
  • 4 cups Cooked Rice
  • 2 Green Onions chopped, for garnish

Method
 

Preparation
  1. Prepare the chicken by cutting it into 1-inch pieces, and slice the bell pepper and onion.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Sauté the sliced bell pepper and onion in the skillet until they are tender-crisp, then remove them and set aside.
  2. Add the chicken pieces to the skillet and cook until they are browned and thoroughly cooked through.
  3. In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, minced garlic, and grated ginger to create the sauce.
  4. Pour the prepared sauce over the cooked chicken, stirring well to ensure all pieces are evenly coated.
  5. Return the sautéed bell pepper and onion to the skillet with the chicken and sauce, tossing everything together to combine.
