Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, cream style corn, sour cream, melted butter, and cheddar cheese if using.
  3. Mix until well combined.
  4. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  2. Let it cool slightly before serving.

Notes

Make sure to mix the ingredients well for an even texture. You can customize this casserole by adding cooked bacon bits, chopped bell peppers, or diced onions for extra flavor. For sweetness, consider adding a tablespoon of sugar, and for spiciness, add diced jalapeños or red pepper flakes.
