  • 4 large potatoes, peeled and diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth Check for gluten-free if needed
  • 1 cup milk Can substitute with cream or dairy alternatives
  • Salt and pepper to taste
  • 2 tablespoons butter

Method
 

Cooking Instructions
  1. In a large pot, melt the butter over medium heat and sauté the onions and garlic until they are soft.
  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer it in batches to a blender.
  4. Stir in the milk and season with salt and pepper. Heat through.
Serving Suggestions

Notes
