  • 1 cup cheese (cheddar or mozzarella) Shredded

  • Parmesan cheese for serving (optional) Grated

Method
 

Cooking
  1. In a large pot, combine the pasta, broccoli, pesto, and vegetable broth. Bring to a boil over medium heat.
  2. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the pasta is cooked and the broccoli is tender.
  3. Remove from heat and stir in the cheese until melted. Season with salt and pepper to taste.
  4. Serve hot, topped with Parmesan cheese if desired.

Notes

Feel free to add other vegetables like spinach, bell peppers, or peas for variety. For a little heat, sprinkle some red pepper flakes into the mix. Use whole grain or gluten-free pasta if you prefer a healthier option. Adjust the amount of pesto according to your taste.
