  • 1/4 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup honey Can be substituted with maple syrup for a vegan option
  • 1 tablespoon Dijon mustard
  • 1 tablespoon poppy seeds
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. In a bowl, whisk together apple cider vinegar, vegetable oil, honey, and Dijon mustard until well combined.
  2. Stir in the poppy seeds.
  3. Season with salt and pepper to taste.
  4. Drizzle over salads or grilled chicken as desired.
  5. Store any leftovers in the refrigerator.

Notes

For a creamier dressing, add a tablespoon of Greek yogurt or mayonnaise. Adjust sweetness or tanginess to your liking with more honey or vinegar. Shake or stir before serving after refrigeration.
