Preparation
- Place the rice in the bowl of a rice cooker. Top with the hot pot sauce to taste.
- Arrange the mixed hot pot ingredients in a single layer on top of the sauce and rice.
- If using the sweet potato, place it at the center of the hot pot ingredients.
- Pour the water into the rice cooker bowl according to your rice cooker’s instructions. Add soy sauce to taste if desired.
Cooking
- Cover the rice cooker and select the 'Mixed' setting. Once the cycle is complete, uncover the cooker.
- Remove the sweet potato. If it is not cooked through, microwave it on HIGH for 1-2 minutes.
- Cut the sweet potato into slices and set aside.
Serving
- Using a rice paddle, stir the mixture and transfer to serving bowls topped with sliced sweet potato.
- Serve warm with optional garnishes like green onions or cilantro, and pair with dipping sauces.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or over a stove with a little water for steaming.
