Ingredients
  

Main Ingredients
  • 2 cups short-grain white rice, rinsed Rinse thoroughly to remove excess starch.
  • 1 packet hot pot soup base sauce of choice (3- to 4-ounce) Choose spicy or mild based on preference.
  • 1 lb mixed hot pot ingredients (sliced beef/pork, shellfish, vegetables) Use a variety of meats and vegetables for best flavor.
  • 1 small unpeeled sweet potato (about 5 ounces, optional) Adds sweetness and texture.
  • 2 cups water Use as per rice cooker model instructions.
  • 2 tablespoons light sweet soy sauce (optional) Adjust quantity for taste.

Method
 

Preparation
  1. Place the rice in the bowl of a rice cooker. Top with the hot pot sauce to taste.
  2. Arrange the mixed hot pot ingredients in a single layer on top of the sauce and rice.
  3. If using the sweet potato, place it at the center of the hot pot ingredients.
  4. Pour the water into the rice cooker bowl according to your rice cooker’s instructions. Add soy sauce to taste if desired.
Cooking
  1. Cover the rice cooker and select the 'Mixed' setting. Once the cycle is complete, uncover the cooker.
  2. Remove the sweet potato. If it is not cooked through, microwave it on HIGH for 1-2 minutes.
  3. Cut the sweet potato into slices and set aside.
Serving
  1. Using a rice paddle, stir the mixture and transfer to serving bowls topped with sliced sweet potato.
  2. Serve warm with optional garnishes like green onions or cilantro, and pair with dipping sauces.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or over a stove with a little water for steaming.
