Preparation
- Cook the pasta according to package instructions, then drain and set aside.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
- Stir in the taco seasoning according to package instructions.
Mixing
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, tomatoes, bell pepper, red onion, and cheese.
- Add the salsa and cilantro, and toss gently to combine.
- Season with salt and pepper to taste.
Chilling
- Chill in the refrigerator for at least 30 minutes before serving.
Serving
- Serve cold or at room temperature with optional toppings.
Notes
Store leftovers in an airtight container in the fridge. It stays fresh for about 3 days. Optional toppings should be stored separately.
