Ingredients
  

Pasta and Protein
  • 8 oz. pasta (elbow or rotini)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
Vegetables and Toppings
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • 1 cup diced bell pepper
  • 1/2 cup red onion, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Optional toppings: avocado, sour cream, jalapeƱos

Method
 

Preparation
  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  3. Stir in the taco seasoning according to package instructions.
Mixing
  1. In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, tomatoes, bell pepper, red onion, and cheese.
  2. Add the salsa and cilantro, and toss gently to combine.
  3. Season with salt and pepper to taste.
Chilling
  1. Chill in the refrigerator for at least 30 minutes before serving.
Serving
  1. Serve cold or at room temperature with optional toppings.

Notes

Store leftovers in an airtight container in the fridge. It stays fresh for about 3 days. Optional toppings should be stored separately.
